Ingredients:
- 1 pound boneless, skinless chicken thighs or breasts
- 6 cups chicken bone broth (preferably homemade)
- 2 medium carrots, peeled and diced
- 2 celery stalks, diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 medium zucchini, diced
- 1 cup chopped kale or spinach
- 1 tablespoon fresh lemon juice
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh cilantro, chopped
- Salt, to taste
- Extra virgin olive oil, for cooking
Instructions:
- Heat a large soup pot over medium heat. Add a drizzle of olive oil and sauté the diced onion, carrots, celery, and garlic until they start to soften, about 5 minutes.
- Add the grated ginger to the pot and sauté for another minute until fragrant.
- Push the sautéed vegetables to one side of the pot and add the chicken to the other side. Cook the chicken for about 5 minutes on each side until browned.
- Pour in the chicken bone broth, making sure the chicken is fully submerged. Bring the soup to a boil, then reduce the heat to low and cover. Let it simmer for about 30 minutes, or until the chicken is cooked through and tender.
- Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
- Add the diced zucchini and chopped kale or spinach to the pot. Simmer for an additional 5-10 minutes until the vegetables are tender.
- Stir in the fresh lemon juice, chopped parsley, and cilantro. Season the soup with salt to taste.
- Serve the AIP Healing Chicken Soup hot and garnish with additional fresh herbs, if desired.
